* Orzotto is a portmanteau of risotto and orzo, the Italian word for barley. The dish is popular in the Friuli Venezia-Giulia region of north-eastern Italy.

Sounds great. We’ve used different grains to make a “risotto” style dish. I hope your mamma is better with her dental issues. That is tough, not eating whatever you like and also for you to come up with tasty dishes!! You did great with this one. Have good week!!
Ciao Marisa, I’ll be making the orzotto for a while longer. It’s taking a while for mamma to overcome her dental problems. Not easy on 91-year-old gums, so there’s still a lot of mashing and overcooking going on! Hope you’re well, nice to hear from you.
